Recipe for May Whipple’s Ice Box Cookies
1 cup brown sugar
1 cup white sugar
1 ½ cup Crisco or margarine (melted)
3 eggs well beaten
4 ½ cups flour sifted
2 tsp baking soda
½ tsp cinnamon or other spice
1 tsp salt
1 cup chopped nuts (walnuts)
Mix sugars and Crisco well, add eggs, beat together.
Add flour with baking soda, spices and nuts, beat well.
Make into long rolls – wrap in wax paper and put it refrigerator (not freezer) over night.
Cut into thin slices and bake in 350 degree F oven – 10 to 12 minutes.

If you want a sweet treat with an exotic twist for a large number of people, try the Philippine fruit salad by Noemi Fuentes – she’s a native Filipina from our congregation. This makes a lot but it has a very sweet and rich flavor. Noemi says that it is a common dish to serve on special occasions. In our church, we host church fellowship around Philippine Independence Day – often also Pentecost Sunday – and she makes this. Once people try it, they love it!
